Happy new year yinz! I know that we rarely offer co-fermented coffee here. Our style is more to utilize them in blends. But occasionally we come across one that’s so good we can’t help but to share. This blackberry co-fermented caturra from Sebastian Ramirez is one such bean. Sebastian’s farm, El Placer, operates more like a processing facility than a farm. They purchase cherries from the surrounding area and Sebastian oversees the processing. And the processing is impeccable.
This is a coffee that we originally purchased for our Unfinished Business blend! But it’s too good to keep bottled up like that so we’re releasing it to the world. When I drink this coffee, my thoughts immediately go to dessert. The berry forward flavors and pastry like sweetness give major pie vibes to me. With cooling, that trends more towards raspberry and chocolate ganache. The flavors are strikingly clear and balanced and the berry notes never feel overwhelming. It’s delightfully good times.
