This is the September subscription coffee!
This is the first of two coffees we have from the Banko Chelchele community in Ethiopia this year. It’s what they call a supernatural. That means the cherries were anaerobically fermented for 24 hours. Then the beans were moved to raised beds and dried in whole cherries over 2-4 weeks. The result is a remarkably fruit dominant cup, but heavy fermentation notes are nowhere to be found as the cup remains crystal clear.
Natural Ethiopian beans are almost everyone’s first love. That’s definitely true for me. The flavor profile here reminds me of the fruit bombs in my early years back in the late 00s. Big and heavy berry notes all around. The difference is that this coffee is so much cleaner than those were. I suppose that’s a testament to how far the industry has come. Producers, roasters, and baristas have all become so knowledgeable over the years. And that’s manifesting as delicious coffee. Knowledge is good times.
