We’ve been pretty quiet about competition stuff recently, but behind the scenes we’ve been all systems go helping Paulo prepare for the World Barista Championship this fall. And right now that means unlimited tasting. Selecting a competition coffee is kind of a Goldilocks situation. Some coffees are too acidic. Some are too herbal. Some aren’t acidic enough. Anyways, even if the samples we’re tasting aren’t juuust right, any coffee that’s found it’s way onto a competition table is a certified banger. That’s exactly what we have here. This bean was sent to us as a possible competition candidate, and although we didn’t select it for competition, we did select it to share with everyone because it’s a wild. And it marks the first appearance of rock star producer and master of processing, Edinson Argote, to the Ghost line up.
So, this bean is wild. You’ll notice it immediately. From the grinder, you’re hit with intense candy like and sweet fruit fragrances. They’ll definitely carry over to the cup. Cherry is the overwhelming theme of this coffee and it’s present throughout. I’ve had brews of this that straight up felt like I was drinking cherry juice. There’s a soft raspberry candy note that rounds out the fruit profile and keeps it interesting. The acidity is vibrant and refreshing, slightly tart like a rosé, but the syrupy sweetness keeps everything balanced. There might be some floral notes lurking in there but honestly I’m just too amazed by everything else in the cup to notice. Good times.
