This coffee is a real treat for us. We’re ecstatic any time we have an opportunity to scoop something from the Arcila’s. And it’s a papayo to boot! Not to brag, but I think that we were an early adopter of the papayo variety. I believe we featured it during our first year oh so long ago. Since then we’ve seen it’s popularity explode a bit. It’s a regular player on the competition stage. This lot features the EF2 processing from the Arcila’s that is a personal favorite of mine. It has a 24 hour aerobic fermentation, followed a 24 hour anaerobic fermentation, and then pulping and drying.
The fruit flavors here are very complex and very elegant. We’re getting baked peach, tangerine and raspberry. So that’s stone fruit, citrus, and berries. They’re all so balanced with no flavor outshining the others. There are white flower notes underneath the fruits which gives the brew a solid base. It’s a sugary and juicy cup. Again, balance and elegance are the key traits here. It’s not really an attention grabber on the first sip, but by the time you finish the cup you’re like damn, that was a good time. It’s got me excited for the upcoming competition season honestly.
