COLOMBIA - La Terraza

Wow it’s July already? Isn’t that crazy? Maybe time should try going backwards for a change. But I suppose then there would never be anything new and that would be a shame, so I’m on good terms with time. And it means I get to introduce everyone to NEW coffee! This months drop comes to us from rock star producer Wbeimer Lasso and his family farm, La Terraza. This lot is actually a fermented honey process gesha. The cherries were depulped and fermented in tanks for 48 hours. Long enough for the fruit mucilage to break down, but not fully. So the cherries dried for a total of 25 days post fermentation with the mucilage slightly in tact.

Flavor wise this coffee is a flower bomb, but the processing adds a sticky sweetness. Think toffee and mango nectar. I just brewed it and it’s giving strong honeysuckle blossom after a rain storm vibes. Chamomile comes up on the after taste, especially in the cool temperature range. Everybody have a good time.
